I have "struggle meals" in 2 different categories, one for when money is tight and the other when I struggle with executive function and feeding myself and my family is the problem, the money is easy to solve if you have time, materials and basic skills, an instantpot helps a lot, dry beans and other pulses are cheaper dry than in cans and cheap cuts of meat and organ meat often demand longer cooking time to become tender, that's when the instantpot shines by cutting down the energy needed to cook and often also the time, I also buy things that are discounted because are soon going bad and batch cook with those ingredients and then freeze individual portions, if I find discounted eggs I will batch cook with them things like pickled eggs, quiche, ramen eggs, etc.

When my ADHD gets the better of me and if I hold a knife I will probably lose a finger I like to prepare simple, easy things, like toast with peanut butter plus hot sauce and ham, porridge of oatmeal cooked in protein milk or things that I can cook on the vapour of the carbohydrate I am cooking, for example protein pasta and in the same water ill add frozen veggies and hotdogs, or ill add a couple of eggs and a tomato over the cooking rice, etc.

If you are struggling with feeding yourself for whatever the reason it might be I wish you courage and good luck, things do get easier once you learn some tricks ^^
