It was interesting in a literary sort of way. The act of stabbing can be construed as the manager's sexual impulse (penetration of the flesh) and obsession towards the model. I do also appreciate the interpretation of the manager himself serving as the knife separating the model from others. At the start, the manager thinks "if he'd died he'd be the eternally beautiful young man" and we end up understanding that the manager did not want this, instead he wanted to have the model totally to himself by taking away his beauty but not his life, thus never "finishing him off".
