Redeeming a courtesan usually refers to buying her out of service. That is, she becomes the 'woman' of whichever man pays off her debt (and additional price) in whatever capacity he wishes, eg. wife (rare), mistress, low-level concubine, or even just a servant/employee (unusual, but this is technically what Maomao became when Jinshi redeemed her earlier in the story).
