Great question. I had to go find an Omegaverse guide as I was also confused. Pretty much up to the Authors interpretation from what I gathered because I've read an Omegaverse story where two Alpha's...male and female had kids (affluent family etc) and in that universe Alpha/Alpha pairings were preferred as the love interest was Omega. Yet read that two Alpha's can't have kids. Also was reading a story where the Alpha father of an Alpha son was homophobic as his preferred mate was a male Omega. So yeah. Can get confusing, but pairings apparently aren't absolute as modifications are being made depending once again on the Author. Also in some Omegaverse stories, Omegas are often looked down upon and/or treated like crap.

Then again, maybe I was actually reading an mpreg story and not Omegaverse with the homophobic father.
