I agree that its an acquired taste, if you like pickled vegetables then i think you'll like it. But if anything, kimchi could be made at home :) there's loads of recipes on YouTube that will show you how to make them. Kimchi is usually korean chili flakes, sugar, salt, ginger, garlic, shrimp paste, scallion, daikon radish and napa cabbage.
Good luck hahaha. You'll find that its not that hard. The only thing is waiting for it to ferment and get sour. Try to make a small batch just in case you don't like it. The smell is also somewhat strong.
A way to get rid of some of the sourness, Koreans like to stir fry it. Cooked kimchi is less sour then eating it as it is.
