Yeah pretty much from what I remember the church (Catholic) at the time was a big power and it helped that a lot of scriptures were in latin and had to be translated by only those who could read, it gave people the ability to change some things here and there for convenience whether bad or good that's up to our own judgement. It's like a bad version of telephone where each iteration is farther from the original one way or another.

the canon of the new testament was already decided during roman empire times, and over time accepted by all and reaffirmed later too (canon of trent), it's not like people could just add freely to the bible in the catholic church, some priest telling their folks some stories because no one could read is a different story tho
more importantly though anti-homosexuality stuff is already in the old testament (like leviticus 18:22 and 20:13, sodom and gomorrah) so preceding the bible
that said you can question the interpretation and translation of all the verses
