I don't think he dyed his hair red. In one of the panels you can see his roots growing in red and the rest of his hair was black. I think as the yang energy problem (idk if its right to call it a curse, was he cursed?) changed his body constitution and began showing up as red hair and maybe even thicker bones like Bihwan described Dokkaebi having. Although I do agree that Minchan not dying his hair anymore shows the way he thought about himself and his situation changing, maybe its self acceptance, or bcs his grandma wasn't there anymore he only had his life to care about now, he probably dyed his hair dark in order to fit in at school, especially as his hair began getting more red, once he graduated and became an adult, and as his grandma wasn't there anymore he probably didn't give enough of a fuck to waste money and continue buying hair dye all the time lmao.
