Sadly no. Once you unfollow it won't show up again. Your best try is to find the original post and like it so it stays on your profile.
I didn't unfollow, it's like, because of chapter updates and other things the previous notifications just disappear. But I don't know any way about how I can check all the past messages that I've followed.
You can't :( the notifications go only down to a certain number. The only way it can come back if someone comments on the post you followed
