Most? Many gay couples do have a top or bottom role, as in many don't reverse.

Sorry to 'butt in' but although many are exclusively top or exclusively bottom, almost every survey among gay couples results apparently do show that switching at some point in their life -- depending on the partner, mood or for experiment or whatever is what most do. The rigid role assignment is more of a heterosexual myth --- and Yaoi being a genre written by women for women mostly drives this to the extreme because it does make it a rule almost to the point where it's like the guy were castrated to fit into the role. Yaoi gay couples mostly emulates a heterosexual relationship so it's no coincidence that ukes are almost always carrying some stereotype girl feature and as such apparently 'lose' their capacity to use their dicks.
That being said, for gay men who are exclusively top or bottom, there is some research trying to identify who they prefer as partners and then gender 'similarities' like exclusively top preferring less masculine men and exclusively bottoms preferring more masculine have a ring of truth..
