So, as far as my puny understanding can reach: Jiwon likes Myeongin romantically, but hasn't yet realized her feelings or/and unconsciously suppresses them. At first, she wasn't thinking about kisses in a "friendly" way. After the first kiss, which has started the whole charade, she believed it was something more. Then her train of thought took the wrong turn and she assumed that Myeongin was likely just playing with her. So she started doing the same perceiving her desires as lust. Jiwon openly speaking about previous boyfriends with Myeongin may have something with her being jealous because She thinks Myeongin has kissed others before.
So they both are thinking that other one doesn't have romantic feelings for them. Myeongin just accepted it silently, and Jiwon, while not admitting her feelings, actually tries to monopolize Myeongin. What a mess.

It was nice and wholesome, without unnecessary drama. I hoped it would still last for a while longer, but i am still happy it ended on an uplifting note.

Ending sure was anticlimatic and abrupt. I think the story pacing went haywire shortly after the episode when Min ended their pretend relationships. Some things should have gotten more screen-time not to feel rushed. For example, Seyun and Yuna's dating probably should have been shown more(perhaps with Yuna actually trying it seriously), with both characters somehow progressing with it, because as it was it Seyun's character was just abruptly thrown away and didn't get any closure. Also, Min's struggles after break up with professor were almost nonexistent. And it was a good chance to show both Yuna and Min actually contemplating mistakes they did and taking a new stance in regards to love and relationships. That opprtunity for characters growth feels wasted. And lastly, Min finding Yuna in the span of one chapter was unnatural, i think there were many ways to extend it, up to and including Min's possible visit to Yuna's parents.
All in all, story was good, but for some reason author went with an unnecessary swift ending, which leaves you with "Huh, so that was the end?".

Why is Jiwon thinking "we're just friends"? Previously, she asked her brother's girlfriend about what has changed since they started dating and got the answer about them being friends, who just fool around with each other. Later, she said she wanted to be such "special friends" with Myeongin. It was her notion of romantic relationships, wasn't it? So why did it regress to "just friends"? What's with the sudden downgrade?

Yeah, at first you wake up with kiss marks on your face and then next time you know it, you wake up with signature marks on marriage papers.

Translator probably misunderstood. Jinhwa's mother is her biological parent, and Jinhwa called her "stepmother" in a sarcastic way to compare her with cruel stepmothers from fairy tales, who force their daughters to work(get up and go to school in her case). So, if no weird plot twists occur, Jinhwa is not adopted and has no stepmother.

Wasn't it stated previously that camera can't catch her tail and ears due to magic? But now it somehow can. Is it the influence of bar's magic field?

There really is no villain(except for the cucumber man) in this story. But personally I find Yuna the most likable out of the three. She is simply naive and eager in her feelings, and though she tries some lame trickery and plots to get her relationships going, she ultimately is unable to do something cruel. So, apart from her narcissistic problems, she is not a bad person.
Professor's situation is partly understandable. She went along with her feelings and didn't think of what happens next. She is scared of scandals that are prone to happen if someone finds out she dates her student(I believe that's the main issue here, that student being a girld doesn't help either). Her fear is not unbased, as it can probably severly affect her life to the point of being fired. But she is too indecisive, she is not willing to take everything seriously, how will relationships progress, will she change her job or Min will change her course, or whatever. She should have thought about it.
I think Min is less likable and is considerably guilty in creating this whole mess. She is impulsive and doesn't really think of consequences. It feels like she, unable to date normally with professor, compensates it with Yuna, doing all those lovey-dovey stuff she did at the beginning. She once said professor was giving her mixed signals, but then she gave those signals to Yuna. Using words from some song, her oaths betray each other till there's nothing left to keep.
