I don't think Takatora brought up kids because he's immature, we can see that as soon as he arrived home after getting raped he wanted to have sex, and before that instance we haven't even seen him thinking about having kids at all. It's clear that the assault has seriously disturbed him and he's trying to feel in control and searching for stability, in a way he tried to fill that need with the idea of kids to create stability in his relationship with his boyfriend and future. Right now he's becoming afraid of alphas being a threat in his future plans(his uncle brought up marriage too) so he's trying to establish his relationship with kids.
I think the rings were to protect himself and Kameyama from harassment but also for that stability.
I just don't think it's right to fault and call a rape victim immature because of how they act right after they were assaulted. Many women also act the exact same way Takatora did to feel in control but saying that they want to reinforce their femininity and need to grow up will be an odd thing irl.
In the past few chapters I don't think Takatora was really trying to become more alpha like, he was coming to terms with being an omega and seeing the conditions of other omegas too. He didn't even react badly to his uncle's offer for marriage with an alpha(he would if he thought of himself as alpha) and was open to hire omegas too, both before and after the assault.
