In the first chapter it was shown that some kind of a god transformed (?) him and "lets make you the most beautiful cat possible" or something. So I'm guessing he was given new appearance. And it seemed like he couldn't keep it up whenever he got too stressed so his hair became white. It was probably to hide his true identity?

guys !! it's not shin not loving wolfgang or just being scared, and it's not him valuing wolfgang's title more than wolfgang. when shin talks about how wolfgang should be as king and worrying about his image its defending his own moral struggle too. he was originally just trying to put a better king in power and now he feels like he is the thing holding said king back. any time wolfgang puts shin before the country, he feels that guilt. wolfgang doesn't have to deal with that internal conflict of shin vs the country since he only wanted to usurp his father, not lead a country, to begin with.
