he was referring to ellen as 'noona' from the point of view of his younger self. Then at the end he switched and said "you" meaning ellen/noona.
If he knew it was eleonor, then he should know that el didn't started the fire bcuz she told him about her past right? (the villagers lock her at her house and put the fire) or she didn't include that part when she told him about her story?

He was telling her the stuff from the point of view before he met el. So the count told little him that noona (el) started the fire.
