We can tell because the dude on the phone says "that kid broke my arm" and this is when it happened, when Doumeki caught him. Also the whole "say Yashiro is better than Hirata" thing is Yashiro's way of teasing him, since he used to work for him and now he's more or less forced to work for Yashiro.

My question is, does alois exist on the manga? if yes, then doenst it made 'ciel' demon?

There's two Ciels in the sense that ourCiel is the realCiel's twin brother, and after realCiel's death after having been sacrificed on the altar ourCiel took his name and posed as him. No, that doesn't make either of them a demon. In the manga it's never been mentioned at all that someone could be turned into a demon, that's an anime-only thing as of right now and the only demon we have ever seen is Sebastian.
Why does the sacrificed one seem to be alive now, that we still don't know, my personal guess is that it's Undertaker's doing, with all his experimentation with his bizarre dolls and bringing people back to life.
Also ourCiel probably had a name of his own, in the revent flashbacks where we can see both of the twins interacting between each other he's never been called Ciel, so it just hasn't been revealed yet. Maybe Yana does not intend to reveal it however, who knows haha.
