It's always hard to find decent switch couples, hell any switch couples are difficult.
I got two suggestions:
1. Sayonara Okaeri Itoshisa ni -Koi ni Tsuite,
This one is good because it has an actual plot, got feel good vibes towards the end although there is a bit of angst in the middle, nice and short and the switching is consistent. By that last point I mean you see both top/bottom equally it isn't like one person is the top who bottoms once or something like that, or trying to switch a top to a bottom. Also, it's has a straight to gay story line.
2. Wagging the tail
Okay this takes a while to get to the switching sex part, and is animal characteristics so it will not appeal to everyone, but as I said earlier switch couples ain't easy to find. Basically one character find himself catching feelings for another and bottoms for him although he is a seme, and later the character who was topping bottoms. Well, this takes a bit of time to build, and I don't like how one character is seen equally bottoming and topping, and the other is barely shown bottoming. But overall pretty decent.
