As i understand it,
The crown prince was obsessed with her because she was the only one who loved him with all her heart and he felt like he lost something after she stopped being obsessed, also the fact that his dad ordered him to marry her cause it brought power to the family so two reasons
The priest is a bit weird but i think it's something related to his trauma with his mother, where seeing Eris try to end herself, made him want to save her so she doesn't end up like his mother.
The knight, i forgot why he was obsessed, i think he just found her interesting or something since her personality had a change and she also kinda once hears out his story and maybe he just thought it as a gesture of love. I think he just wanted to act like a saviour for her since he does save her from drowning (i think Eris herself mentions it in the story about him having saviour complex or something)
