My working theory. He didn't gain lvls because he is already MAX LVL!
The other theory is that because that body didn't grow normally in that world he was perma stuck onto lvl 1 but because of that can unlock any number of skills?
It was mentioned earlier that he most likely didn't level up since the monsters were supposedly illusions made by magic stone as opposed to real ones. Defeating real monsters is pretty much the only way to lvl up.

He does eventually start going up in lvls. If I remember correctly, he cries when he gets to lvl 2.

no i think they said that in the labyrinth they are projection of monsters not real so that is why they don't give exp but being so op to clear that labyrinth in lvl 1 and gaining so many skill i waiting to see how op he will become when he starts leveling up
Maybe if the mc defeated monsters outside the labrynth he'll level up since the undead in it are illusions...

yep. once he stopped drinking that his level went up.
