He purposely cooked mediocre dish just to prove his point (that he can bribe even the judges). It's too early to judge. I mean if he really is a sucky cook, Azami would have kicked him out already.
How is Eizan even an elite ten member? Did he bribe his way in? There is literally no cooking skill implied in Eizan.
