I think you are confusing the manga and anime. But Hide dissapears in Tokyo Ghoul, not Re:

he doesn't fully eat him if I remember correctly... I think I saw a panel of Kaneki eating the jaw, lips and the skin from the front of the neck (is that what u were referring to?)
