Definitely read the original first it’s awesome and different to some extent from this one there few changes but same plot so yeah start with the other one

Honestly you can read either first, it doesnt matter. I'm reading Fools Remastered first rn on Lezhin, and it's ongoing (on chapter 17 rn)...
Idk about any changes in the story, however I flipped through the Original Fools and I like the art of the Fools Remastered version a lot better. It's much cleaner and more appealing to look that.
