I am guessing some people are afraid(or dislike) to eat raw eggs though it's going to be slightly cook since it's mixed with the hot pasta. (might be a mis-translation there; the soft-boiled eggs lol)

I was thinking about poached eggs too, but that seems more like a novelty topping, rather than something you'd argue belonging to the dish. ┑(￣Д ￣)┍
