Ciel becoming a demon was an anime-only feature. It never happens in the manga.
Essentially, when they made the first season, the manga only had the Jack the Ripper arc and the Curry arc published. They needed more, so they wrote their own material. Everything aside from episodes 1-6 and 13-15, including Season 2, is anime-only. Consider it a separate story entirely.
Book of Circus does happen in the manga, and it happens right after the curry contest. Same with Book of Murder and Book of the Atlantic, in that order.
I know it's really confusing, I had a hard time figuring shit out when I started reading the manga. Lmk if you have any other questions, I'd be happy to clarify anything :)
