I think it's due to religion. Covering their hair keeps them modest and pure. Having it down would be indulging in one's own desires. Anyone feel free to correct me if I'm wrong.

The Amish abhor emotions/feelings like vanity, greed and anger. They view things like wearing your hair down and wearing clips, barrettes, etc. as being vain. It's also why that girl's doll didn't have a face and why they don't believe in photos. They don't really have different hair styles, for the same reason. In the view of their religion, these are all shows of vanity. Also, from a practical standpoint they spend a lot of their time in the kitchen, so having their hair up is more practical.
