It's a reference to hijikata's personality quirk in the manga/anime itself. Hijikata is so damned obsessed with mayonnaise that he always has a bottle of it anywhere he goes (the shape of the bottle even insinuates the famous japanese mayo, kewpie brand). IMO tho, mayo shouldn't be used as lube, it has vinegar/citric acid stuff in it. Imagine the afterburn if it was used IRL.
