I don't understand why people don't like the idea of Emiel being the ML.

Like,, what?? Obviously a knight isn't just gonna start flirting with the person he's trying to protect. He has drawn a line in their relationship, which will help him protect Estelle better without getting too emotianally involved, just like a proper knight should.
Just because they don't blush everytime they see each other doesn't mean they don't have any chemistry. Clearly Emiel cares about Estelle alot. Plus he's been watching over her since she was a child so he probably hasn't had such thoughts. The age gap isn't big either...
I wouldn't mind if Emiel was the ML, but I'm honestly open to other ML suggestions ╮(￣▽￣)╭
