Basically can be separated into whether it's 18+ or not and who the targeted audience is.
Shoujo: PG13, Target: Girls, heteronormative main characters
Josei: 18+, target: girls, het mcs
Shounen: PG13, Target: Boys, het mcs
Seinen: 18+, Target: Boys, het mcs
Ecchi: PG15, Target: boys usually, het MC's usually, highly suggestive but never crossed the line.
Hentai: 18+, ditto above, crosses every line and then comes back to violate it with a spoon.
Shounen ai: PG15, Target: generally girls but open to anyone, maleXmale relationships
Yaoi (BL): 18+, ditto above (Note: In Japan, "yaoi" is used strictly for pwp/smut and the English word "Boys Love(BL)" is used for any mXm relationship. Can be confusing)
Shoujo ai: PG15, Target: mixed, FxF relationships (Note: from the beginning Shoujo ai has had more of a mixed audience. Phycologists attribute this to a much lower psycological barrier to female friendship blossoming into love. Less toxic masculinity getting in the way I guess)
