What do you call someone who like one sex but there's this ONE and ONLY ONE person of the opposite gender whose an exception? Like, you get off on one gender but find there's that one person( in a population of millions) of the opposite gender that does it for you?

It depends on the person, it’s hard to label yourself sometimes and like it’s not really necessary if you don’t feel like it

Well it would be called bi. Sexual orientation isn't about quantity, it's about which genitals turn you on.
If it's opposite it's hetero, if it's same it's homo, if it's both it's bi and if neither it's asexual. That's what you really need to know.
Keep in mind that many people don't do the difference between sexual orientation and sexual behavior.

Also if you fall in love with someone, there is the possibility that you will only care for that person and only them could turn you on. Then how do you know you aren't attracted to people of the same sex as this person if you are deeply obsessed with said person ?

Falling in love don't mean wanting to do it with someone (I had a hard time figuring this one out). You can fall in love with someone you are not sexualy attracted to. And you can have sex with people you are not sexualy attracted to. Which mean you can pretend to be attracted or not attracted by a sex. It also mean you can have sex with someone you love but aren't sexualy attracted to.
Or you can be in denial, acting like a straight when you are gay, acting like a gay if you are straight... You get the picture.
