In the chapter, they do indeed referred to the head of the lotus as the root, but that is most likely a translation thing. But the seeds are not the only that is edible!
The roots are absolutely edible and incredibly delicious! Even a simple google search would’ve told you that it was edible....
It’s a common vegetable in China and is seen eaten in other countries as well!
