You do have a point. But we need to keep in mind that this is a comedy, so the plot is not to be taken that seriously.
From what Latte explained so far, everybody besides the 3 fishes and Ibelin is supposed to be really fucking ugly. So I guess the 3 were just happy to be around someone that doesn't become a brainless zombie at their mere sight.
Personality wise, Latte is way more interesting than Ibelin, but she is very goofy. Not everyone's cup of tea ╮(￣▽￣)╭

I am not saying all this because I am upset that the male protagonists arent interested in Latte since I really dislike him (the prince I kind of like he seems nice but I still think latte can do way better)
