Mob Psycho 100 ;-; It's so good. The animation is gorgeous but I know some people aren't too keen on the art style.

Violet Evergarden if you want some pretty kyoani visuals. A bit of a tear-jerker, great soundtrack.

Nichijou for random comedy. It's hard to describe this one. Just check out a clip on youtube to see what I mean.

Houseki no Kuni, brilliant use of CGI. I usually find cgi in anime unappealing but they managed to do it well.

Neon Genesis Evangelion, an oldie but a goodie. It's one of those animes that you'll either love or hate. It's groundbreaking for a reason. It deconstructs the mecha trope (gundam was super popular back then and this was like the antithesis of it) and gave birth to a lot of modern day anime tropes. I recommend anime series > end of evangelion > the new generation eva movies.

Carole & Tuesday, BOY. IF U LOVE AMERICAN IDOL AND ENGLISH MUSIC ETC. I think you'll like this haha. It's directed by the same person who handled Cowboy Bebop.
