I think it’s because “flying” can be used almost the same way “f***ing” can be used (so basically to make what you’re saying sound more forceful/emphatic), at least in American English, although of course “flying” is not a curse word. I know my mom hasn’t said the phrase “I don’t give a flying rip” before. So I think that’s where it came from.
