I was also confused about who the Princess of Kansiol loved but I strongly believed that it was not Meredith since it was clearly blow with her all the time... as far as I know Rood's other brother (which is Meredith) is a king who extremely likes and adores humans, And if Meredith was indeed and also in love with the Kansiol Princess one way or another Meredith should've remember or even mention that even a little bit ever since the revelation chapters (specifically who is Meredith).... There is also the fact that we mostly see the Princess Kansiol always with the King (who is now Blow) during the reminiscence. It is probable that the stated "adore" of the Princess Kansiol to Meredith (which she clearly named Meredith) is not the same "adore" that she feels to the King hence that adore is not "in love" moreover she may have "adored" Meredith because technically Meredith is King's brother and the fact that this Meredith also adores humans hence friendly..... Welp anyhow this is just me trying to make sense also to me since this previous chapters are pretty confusing as always with the unclear revelations...
Hahaha, I feel ya on the confusion part xD But your right it didn't seems as if it's Meredith that the kansiol princess was in love with more like it seems to point towards Blow. But, it makes me wonder why the princess named the big demon guy "Meredith" questions everywhere (T^T)/

Current chapters featuring Lanoste's past: Shic's mom is definitely part of the Kansiol lineage which means Shic is of royalty, Since females are the only ones with the magical power stuff Shic's mom was kept in "hiding" by the crazy Kansiol dude/her brother. Lanoste has some crazy powerful magic up his sleeves + smartass so ya~ No wonder Shic is a beauty <3
