It's not like the pickles we usually ate, you can think of the taste as sour, salty and umami flavors, as well as a sharp acidity. Other tastes such as sweetness and tanginess come through while chewing the vegetables.

Not about how it tastes specifically but I LOVE it in fried rice, korean soups and hotpots, gimbap, and loads of other korean dishes lol. It's honestly one of my fav ingredients to cook w/ but everyone else i know also loves to eat it on its own! If you ever get the chance to try it, I'd definitely would! I think the best ones are pickled in glass

Ordering online may not be the best? Plus if it breaks, it'll smell very strong in a bad way. BUT if you do extensive research on the brand, and there's videos of other Asians advocating for it, maybe you'll be fine?

Its really hard to replace buying it in person or making it irl fresh.

Are you a fan of umami? Heads up, kimchi uses shrimp paste to get the og kimchi flavor. I was honestly shocked to find out it uses shrimp because my sister intensely HATES seafood but really enjoys kimchi. So, dw about a bad seafood/ocean taste, it's all spicy, sour, salty, savory, and umami. And if the kimchi is fresh, it's also crunchy.

Sorry I keep coming back spamming more stuff xD
Kimchi also smells. I personally don't think it's a problem but some folks do.

There is another version like kimchi but w/o shrimp. You won't get the same taste but you'll get to experience korean pickled dishes. Tbh, if you dont cook w/ it or like to eat it already, it's best to just go to a genuine korean restaurant to get a taste of it or befriend someone who's family makes/buys it xD

Happy to help! A lot a lot of people don't realize kimchi has shrimp in it. Loads of my friends ate it for years not knowing that either.
I forgot to mention but to find that dish like kimchi but w/o any seafood at all, just type vegan kimchi or Jangajji
