Man.... as a competitive baker, that cake must be soo good tho, like I imagine it'd taste bittersweet from the rock honey too. And then you add the yuja, so it's sour and bittersweet?? My mouth's just watering from the thought of it. Like dam I wanna make it so bad but they don't have the specific ingredients for the recipe so I think it's gonna have to stay in fiction for now. ┐( ˘_˘)┌
Yuja/yuzu is SO good, I'm obsessed. I had a yuzu mousse cake at a Japanese bakery and it was the best thing I had ever tasted. It's like sweet lemon lime, but light tasting? I found concentrated juice and I just add it to bubbly water.
