As you said this character 卯 means "rabbit" or more precisely "the year of the rabbit"
takatora kumajishi: his whole name literally means bear lion eagle tiger. mr alpha right there
arisaka uzuki: the u is for rabbit, ari in his last name can be ant but it's a different kanji so i'm not sure if it's intended
