I'm sure there's those who genuinely find that kind of thing sexy (probably more the personality - the murder part is more like a fictional extreme that isn't taken seriously), but more than anything I think they're attracted to the dynamic of "he's only sweet to me" and the "I can fix him" vibes
The one thing I will give to this author tho is that they managed to make a couple that feels like they have genuinely chemistry imo
They made a stoic character who can still smile and laugh and feel human with the fl without feeling like he's breaking character

Its a bit weird to call a soldier a serial killer. By that token, any soldier that has ever engaged in any armed conflict ever is a serial killer. Sure, authors take it to the extreme to elicit more character drama, but at the end of the day, its a strange notion to have. Serial killers are people who willingly engage in murder of other people they don't even know when is not necessary. A soldier defending their territory or family in a medieval, highly violent setting could not be more different. Same with the treatment of Demian, fathers in history had usually 0 involvement in the rearing of their children beyond the monetary aspect, that was a duty solely left to the mother. And even then, we have historical parenting journals from Victorian era that advise that to be an exemplary mother it's recommended to see your children at least once a day. Once a day, that was considered exemplary parenting behavior. The rest of the time, the children were meant to be with their nannies and governesses if you had money, or working and helping out in the fields or jobs if you didn't, they were a commodity, hardly the center of attention in a household and never supposed to interfere at all in the adults affairs. Committed and loving parenting is a concept that has less than 70 years old in human society, and yet I see comments time and again that complain when the historical setting characters are not the most ultra dedicated parents in the world. It evidences how terrible our media literacy has become that we cannot separate modern concepts from historical settings anymore.
I agree with you, to evaluate a story taking place in an ancient era throughout our modern point of view can be misleading and wrong. But I think the fact is that the whole story (is invented for modern readers and) above all describes an unlikely marriage. Two strangers that get married because a contract they made and then fall in love is a cliché, but it's unprobable. She being so a perfect beautiful kind wise lady is unrealistic, he being so a perfect strong rich handsome Duke is unrealistic. So we go with the flow and hope to see him being an affectionate father, since he's already and affectionate husband, for example.

I do call him a mass murderer because of how his go to way to resolve conflict is murder. There’s a rebellion in your duchy, for example, should you catch the people responsible and punish them?yep! you can even execute them all since they committed treason. But going into their castles and just kill everyone, family members and workers completely unrelated to the crime is certainly worrying behavior. He himself admits to having a lack of empathy and excess of bloodlust he thinks are because of the incestuous tradition of his family. plus, this isn't a period piece, it's fantasy written for modern readers, loosely based on some ideas from different times in history
So there really is no harm in hoping for certain behavior changes or being disappointed at a character who doesn't act ideally because it has nothing to do with how people would have actually lived in a specific point in history
