My guess is that maybe she is into woman and she is just projecting her internalized homophobia to convince herself that is he can be "normal", she can be "normal" too.

I get being shocked and not familiar with men together. But the fact still remains that she understood what she saw, and still offered to set him up with a woman. Kinda rude on her end seeing as though she knows he didn’t see her see.
