I also thought at first the same way you do. But I realized that Carvel can tell whether Mano is fine or not WHEREVER he is (since Mano is his contractor). And when he says "Mano is breathing evenly. Is he sleeping?", I think he is just assuming that Mano is in his room when actually Mano is "breathing evenly"/ sleeping well in the club and not in his room.
