He realized that's she's his wife, but she denied. He make scenarios to see if she acts like his wife, he's s 99% sure, specially because of the "taste" of her guiding, but still he wants her to admit it.
It takes a while for her to do that and in the moment he call her "my wife" she points out that he is her ex-husband because they already died in the other world.
She knows now thanks to her family what love is and she don't wants to feel the same way she did when they were together.

he breaks into her room through the window at night and confronts her about being seohyun she denies it like bluelily said but he doesn’t give up, and stays at the closhe manor for maybe a month or so longer to basically stalk her. tries to get in her good side but she just brushes him off even when her heart flutters. the part of the novel i read up to is when finally ciel is called back to the capital since the saintess is suspicious as to why he hasn’t gone to her for guiding yet

Ok so here it goes:
Its a little difficult to trying to explain everything but is basically divided in 3 parts:
1. The world in the novel when seo-hyeon (I'll refer at her as Irene) doesn't appear in this world and seo-yoon (the saintess) gives guidance to Ciel and the Crown prince.
2. The "real world" where seo-hyeon grows as a orphan and later on meet Ciel and get married.
3. The novel world where seo-hyeon became Irene and Ciel get back in time.
Ciel belongs to the world in the novel, in the first part Seo-yoon appears in this world, is named "Saintess" bacause of that and is the only person in this hole world that can give guidance to the espers, in this time line she gives Ciel and the crown prince guidance. Ciel mentions one time that espers are really possessive with the guides, not because of love but survival instinct. So even though Ciel and the Crown prince are best friends, they start having problems because both of them want to have her. (Seo-yoon loves this).
Irene knows this story in the "real world" because Seo-yoon give hers a book with the story, in this book she gives Ciel close guidance (if you know what I mean), the purpose to her to do this is to convince Irene that her and Ciel suppose to be a couple and that she needs to give up Ciel.
Later on Irene discovers more information but in this time line Irene is convinced that Ciel loves Seo-yoon and that she is in the middle of that. She is more sure about it because Ciel is super cold towards her. Never shows love or affection, only when he needs guidance.
Ciel appears in the "real world" following the saintess, she wants them to be imprinted (to controll him) but they don't have enough matching percentage to do this. Irene appears and just by luck have 99% match with Ciel so the goverment pair them together (not imprinted them).
This is all Irene knows before dying, when she posses Irene body she discovers that Ciel went to the "real world" not because he is in love of the saintess, but because she have been disappearing too much in the novel and the Emperor orders him to follow her and investigate what is happening. He is worried because she is the only one that can give guidance to her son the Ceown prince.
All of this is a tramp made for the saintess to force the imprinting with Ciel, he is a very powerful esper and the government wants to controll him, is just a moment of luck that they can't be paired, she hates Irene for taking him away from her.
Seo-yoon lies to Ciel, telling him that he can't get back to his world, only if he helps the goverment with certain tasks and time. That's why Ciel always take the more dangerous tasks. He is cold towards Irene bacause he thinks Irene is part of all this, he thinks she works with the goverment to have him "imprisioned" not letting him get back to his world. Later on he discovered that is not like that and he actually loves Irene, but he is scared that the government or Seo-yoon could hurt Irene or using her to controll him more, so he pretends that he doesn't love her. That's why he only want her to be by his side and then ignore her.
When Irene wakes up in the novel world she discovered what love is because of her family. She doesn't want Ciel back because she don't want to suffer anymore. She want to fall in love and get married with someone like her dad, that is head over heals for her mom. This is the reason she denied to Ciel that she is his wife. In her mind that's no longer true.
Ciels love her so much that he is willing to conquer her heart once again and discover is not an easy task, he never knew how much he hurt her, and he didn't knew that she wasn't aware that he loves her.
In the novel world Ciel talk with the hight priest and discovered that Seo-yoon is a fake saintess, she was rank C when entered this world and became rank S after she gives guidance to him and the Crown prince. In this time she is annoyed by the fact that Ciel shows no interest in her.
Irene is the true saintess and help discovers more espers and guides, of course she don't want to anyone discover she is the real saintess or they will separate her from her family.
In resume seo-yoon is a total bi#!##ch.
In the part of the novel I'm in Irene still doesn't accept Ciel back. She told him that she's going to marry to the person her family approves. I think is really necessary to Ciel to really prove his love to her. She have a lot of sad stories that explain all the pain she get through in their marriage so I understand why she don't want him back. She still worries for him and gives guidance, she doesn't want to admit her feelings for him, she thinks is only because of her past memory.
Also Ciel discovers that he is imprinted with Irene (that's why he goes to the high priest and discovered she is the real saintess), this means that he can only receive guidance from her, but he hasn't reveal this to her yet
