I'm pretty sure She's a regular animal. Like how they originally thought vivi was a regular bunny, Ash is just a normal panther, she can't transform.

I think it was mistranslated for a while, but the most recent chapter used she/her. Im pretty sure ash is female (due to the eyelashes mostly lol, but also just her bond with vivi, covering her up, and the comfort between the two.)
