When he was talking about beauty not mattering only what’s on the inside, this guy was obviously talking about something personal that happened to him where he was reduced to only his looks. He wasn’t thinking to insult anyone here. It looked like he also tried to let Yuri know that he doesn’t care too much about beauty himself, because she seemed to be unhappy about not being able to look handsome and had to put a lot of effort into her appearance. And he was trying to amateurly cheer Yuri up and ingratiate himself with her. But he also completely forgot that Yuri is a tailor, so it could have been taken as an insult.
Honestly Yuri exploding like that seems to be less about her work, but more about him touching a sore spot with “a vagabond in fine clothing makes him no less a vagabond”. This is a direct (but unintentional) attack on her. She’s a woman, donning on the clothes of a man and pretending to be one. In that society women are seen as having to be wives and mothers. Any other aspirations are unavailable to them because they are living in a “classic” patriarchal society.
So to Yuri’s ears, especially hearing this from the man she’s developing a soft spot for, it basically sounds like “it doesn’t matter what you accomplish, you will always be a woman. And the fact that you are a woman will most likely lead to you losing everything when the truth is discovered”.
This was a scene of misunderstanding and talking past each other. And yes, Yuri overreacted, but this certainly shows us that her living this lie is slowly getting to her. And anything that sounds remotely like an attack to her secret and hiding who she is, leads to her becoming very angry.
