I think it's not entirely accurate to say that Iwaki and Katou have fixed roles in later parts of the manga. Even in the Alive sequel Iwaki is seme in at least one chapter, so clearly they are okay either way even at that point of their relationship. Rather than "fixed", I'd say they have preferred positions.
forgive this little asian and her limited vocabulary... i was just actually trying to settle in for a term to call it so i could give order to my sortings. and they did have preferred position but i was also basing at the story because after they settled in the position, they never switched nor give hints that they do so i just called it fixed position.
